Candied Ginger

Crystallised Ginger

It's time to soak my fruits for the Christmas cake and I make my candied ginger and candied orange peel at home. It is so easy to make and the result is much better and cheaper then the store bough one. I have already shared the recipe of Candied orange peel here. making candied ginger is almost same. Here is the recipe.

Crystallised Ginger

All you need is

Ginger - 100 gm
Sugar - 1 cup
Water - 1 cup
Castor sugar - to roll the candied ginger

Crystallised Ginger

Method of preparation

Wash and peel the ginger.
Pat dry.
Slice it into thin slices.
Add the slices in a pan and cover with cold water.
Bring it to a boil.
Simmer the heat for 2 minutes.
Strain and discard the water.
Repeat the process 2 more times
Heat 1 cup water and 1 cup sugar in a pan.
When it comes to a boil, reduce the heat and let it cook for 5-6 minutes.
Add the ginger slices.
Cook for 20-30 minutes till the the ginger turns translucent.
Do not stir during this process otherwise their will be crystallization.
Strain the syrup and store it for future use. ( iced tea or any other drink )
Let the ginger cool for 2 minutes.
Roll the crystallized ginger in castor sugar.
Arrange on a wire rack and let dry for 6-8 hours.
Store in an airtight container for up to 2 weeks.
